Though Barbecue Nation is full of delicacies, one thing we always look for is Cajun Potatoes. My 8 year old is a big fan of those and she had asked me many times if I can make those at home. I tried it today and it came out really well. Try it it's very simple.
Ingredients
8-10 Baby Potatoes ( parboiled with salt)
2 Tbsp Thousand Island Dressing
pinch of black pepper
pinch of red chili powder
4 Tbsp Water
salt to taste
1/2 tsp Cajun seasoning
1/2 medium sized finely chopped onion
oil for frying
For Cajun Seasoning
2 Tbsp Garlic Powder
1 Tbsp Onion Powder
3 tsp Dried Thyme
3 tsp Dried Oregano
1 tsp Red Chili Powder
1 tsp Cayenne Pepper
1 tsp Black Pepper Powder
1 Tbsp Salt
Combine the ingredients well and store in an air tight container. It's also readily available in grocery stores.
Gently mash the parboiled potatoes with a flat spoon or palm. Make sure the potatoes don't get broken into pieces. Heat oil in a pan and deep fry the flat mashed potatoes. Fry till golden brown. Take out in a serving plate and spread the seasoning over the potatoes and serve hot!!!
