Kadala Curry recipe
1 Cup cooked Black Chana
For masala:
2 tsp oil
½ inch cinnamon
2 pods black Cardamon (elaichi)
3 cloves
1 tsp fennel seed powder
½ onion (sliced)
2 clove garlic
1 inch ginger
1 tomato (chopped)
½ cup coconut (grated)
few curry leaves
¼ tsp turmeric
½ tsp kashmiri red chilli powder
1 tsp coriander powder
½ tsp garam masala
½ cup water
for tadka:
1 tsp oil
1 dried red chilli (broken)
few curry leaves
1 onion (cubed)
1 green chilli (slit)
½ tsp salt
Take oil in a pan, and fry onion till light brown, add ginger, garlic, cinnamon, black cardamon , clove and all masala powder mentioned in ingredients, now add tomatoes fry till oil separates, add coconut, fry a little and add water, cook for about a minute, let the mixture cool and grind in a mixer. Add this paste to the cooked black chana, cook well on low flame. Prepare tadka and add to the Chana curry!
Puttu Recipe
1 cup puttu flour
¼ tsp salt
¾-1 cup water (as required)
1 cup coconut (grated)
In a bowl take 1 cup puttu flour and ¼ tsp salt. mix well.now add ¼ cup water and crumble the flour.add water in batches and mix well with your fingertips.the flour need to hold shape when pressed between the fist, and need to break on further pressing.make a moist flour with crumbly texture. now take a puttu steamer and layer with 2 tbsp of fresh grated coconut.followed by 3 tbsp of puttu flour. again layer with 2 tbsp of coconut, 3tbsp of puttu flour.lastly add 2 tbsp coconut and level it up.close the puttu kutty (cylindrical tube) and steam for 5 minutes or till the steam escapes from top holes of puttu kutty (cylindrical tube)open it and push the puttu using the needle attachment. Serve kerala puttu hot along with kadala curry.
